Our Story

WhereItAllBegan

What started as a reverence for the past became a living mission.

Vellum & Vine was born from a shared love of forgotten narratives and living agriculture. Nestled within the walls of a former 19th-century bookbindery in Hudson, we sought to create a refuge where time operates on a slower, more deliberate scale.

We view wine not as a manufactured product, but as a translation of time and terroir. By focusing strictly on low-intervention, naturally fermented bottles, we honor the raw ingredients and the people who steward the land.

Every bottle we open and every plate we serve is designed to accompany the warmth of a shared story and the deep resonance of a good record spinning in the background.

Elena Rostova

Executive Chef & Wine Director

Elena's journey began in the damp, ancient cellars of the Loire Valley, where she learned that true flavor cannot be forced--it must be fostered. After years of studying under pioneering vintners who championed biodiversity over yield, she brought her philosophy stateside.

At Vellum & Vine, she designs the menu in strict conversation with the daily pour. Her approach to food is deeply agrarian, focusing on small-farm preservation techniques, cured elements, and seasonal vegetables that act as a bridge to the complexities of natural wine.
